Vegan KFC Famous Bowl

The traditional recipe from KFC was popular with everyone, including myself. This meal is super easy to make vegan because you can easily replace the milk and butter with vegan options, and there are so many great vegan chicken nuggets. You don't have to miss out on a classic fast food meal with this recipe, and no one was harmed in the making of it.

Ingredients

Garlic Herb Mashed Potato Ingredients:

  • 3-4 large potatoes
  • 2 tablespoon vegan butter
  • 3-5 cloves minced garlic
  • ½ -1 C plant based milk
  • 2 teaspoon Herbes de Provence
  • 2 tablespoon mixed herbs (fresh thyme, rosemary, sage, and oregano)
  • 2 teaspoon garlic powder
  • salt and pepper to taste

Optional:

  • 1 teaspoon Savory Spice Blend
  • ½ teaspoon Mushroom Umami Seasoning Trader Joe’s
  • ½ teaspoon Onion Salt TJ’s
  • 1 teaspoon 21 Seasoning Salute TJ's

Mushroom Herb Gravy Ingredients:

  • 3 tablespoon vegan butter
  • 2 cloves minced garlic
  • 8 ounces mushrooms, diced
  • 3 tablespoon all-purpose flour
  • 1 C vegetable broth
  • 1 C non-dairy milk
  • 1 tablespoon fresh herb mix like the mashed potatoes
  • 1 teaspoon Herbes de Provence
  • salt and pepper to taste

Optional:

  • ½ teaspoon Savory Spice Blend
  • ½ teaspoon Mushroom Umami Seasoning Trader Joe’s
  • 1 teaspoon 21 Seasoning Salute

Other Main Ingredients:

  • 1 9 ounce vegan chicken tenders Trader Joe’s
  • 1 16 ounce organic sweet cut corn TJ's
  • 8 ounces vegan cheddar cheese, shredded
  • parsley, chopped
