Spicy Rutabaga Breakfast Skillet Home Fries

Who can resist the taste of potato home fries in the morning! Since root vegetables are abundant in the winter season, why not make Spicy Rutabaga Breakfast Skillet Home Fries!

Ingredients

  • 2 tablespoon olive oil
  • 2 rutabaga peeled and small cubed
  • 1 small onion diced
  • 1 garlic clove minced
  • 2 scallions sliced white and greens
  • ½ jalapeño chopped
  • salt & pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoon shredded Colby Jack cheese plant-based cheese, Violife recommended
  • cilantro 2 tablespoon chopped

Instructions

  • Heat 2 tablespoon olive oil in a cast-iron skillet. Add cubed rutabaga. Cook for 5 - 7 minutes stirring occasionally.
  • Add onion, cook, while continuing to stir until lightly browned. Add garlic, scallions, and jalapeños. Season with salt & pepper and garlic powder.
  • Cook for an additional 5 minutes. (If making eggs - this is the time to cook them in a separate pan.) Stir in cheese and half of the chopped cilantro. Ready when the cheese has melted slightly.
  • Serve alongside egg or scrambled tofu. Top it with fresh cilantro and your favorite hot sauce for an extra kick!
