Why eating seasonally is important!
Cauliflower season is upon us making this recipe a great addition to your meal rotation for the month of March! Although you can find cauliflower in supermarkets almost any time of year, its main growing season is the winter into early spring. With almost all produce at our fingertips whenever we want it, many people do not realize how important it is to think about the seasonality of vegetables when trying to decide what meal to make next.
When you eat seasonally, you increase your chances of getting a better quality ingredient with higher nutrient contents too! In season produce also typically tends to be cheaper because there is a surplus of it. This is a great opportunity to think about big-batch cooking and different preservation methods. Bang Bang Coconut Cauliflower
Ingredients
Coconut Cauliflower
- ½ cup chickpea flour may sub with whole wheat or all-purpose flour
- ⅓ cup nutritional yeast
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¾ cup water
- ½ cup panko whole wheat if available
- 2-3 tablespoons shredded coconut
- 1 head cauliflower
- Bang Bang Sauce
Bang Bang Sauce
- ⅓ cup sweet chili sauce
- ½ block extra firm silken tofu - 174g Mori-Nu
- 1 tablespoon wine vinegar
- ½ tablespoon sriracha
Optional For Serving
- sliced green onions
- cilantro
- prepared rice or other grain of choice
